Cherry Shortbread Cookies

  • 2 c. butter, softened
  • 1 c. sugar
  • 2 t. vanilla
  • 4 c. flour
  • 2 c. white chocolate chips
  • 1½ c. dried cherries

Preheat oven to 350°.  Beat butter, sugar and vanilla in a large bowl with electric mixer on medium speed until light and fluffy.  Add flour; mix well.

Stir in 1 c. chocolate chips and cherries.  Drop rounded tablespoons of dough, 2 inches apart onto ungreased cookie sheet.  Flatten each ball of dough slightly.

Bake 10-14 minutes or until lightly browned.  Cool 5 minutes on baking sheets.  Remove to wire racks; cool completely.

In a small bowl, melt 1 c. white chocolate chips in the microwave until melted. Dip half of each cookie into melted white chocolate. Allow to dry before serving.
