Join us October 5th and 6th at Seattle Center (Fisher’s Pavilion) for the Northwest Tea Festival! We’ll be exhibiting there!
For those of you attending my scone class, here’s the recipe:
Peach Melba Scones
• 3 c. self-rising flour
• ¾ c. granulated sugar
• 1 stick unsalted butter
• ¾ c. buttermilk
• ½ c. fresh peaches sliced
• ½ c. raspberries
• 1 t. vanilla
• 1 c. powdered sugar
• 2-3 T. water or milk
• 1 t. vanilla
Preheat oven to 400°. Mix together flour and sugar. Use pastry cutter to cut in butter. Mixture should resemble coarse cornmeal. Add peaches, raspberries and vanilla. Add just enough buttermilk to make a soft dough. Scoop out about ⅓ of the dough and form a small disc about ½ inch thick. Cut into 8 pie-shaped pieces Do this for the remaining dough. Place on a cookie sheet lined with parchment paper and bake until done, about 8-12 minutes. Makes about 24 scones. Glaze if desired with a mixture of powdered sugar, milk and vanilla. Scones can be stored in a sealed container and reheated in foil.
